The Grande Lakes Orlando resort, an enclave near Walt Disney World and Universal Orlando, is embracing the farm-to-table movement with new restaurants and a microbrewery.

Set on a landscaped estate overlooking the headwaters of the Everglades, Grande Lakes is home to two hotels, a Ritz-Carlton and a J.W. Marriott, along with a recently established produce garden called Whisper Creek Farm.

The 7,000-square-foot garden, which produces more than a dozen types of fruits, herbs and vegetables (among them cauliflower, yellow squash and tangerines), will provide many of the ingredients at Highball & Harvest, a restaurant that opens on Saturday inside the Ritz-Carlton.

Its chef de cuisine, Mark Jeffers, created a seasonal menu of Southern dishes like buttermilk-fried chicken with pepper relish, pickled watermelon rind and Cheddar biscuits. Locally sourced ingredients turn up on the cocktail menu as well, which includes a cranberry cobbler made with honey from the resort's own apiary.

Highball & Harvest takes design cues from Florida's old railways, a network of tracks dating back to the late 1800s that helped boost the local agricultural industry. Behind the bar, drinks are listed on a sign modeled after a train station schedule, and bottle openers are shaped like railroad spikes.

Later this month, beer will be added Grande Lakes' roster of homegrown fare, with the opening of Whisper Creek Brewery, which will produce bottled and draft brews made with hops planted on the estate.

In early 2015, Whisper Creek Kitchen, another restaurant, is set to open at the J.W. Marriott.

Every dish will feature at least one ingredient from Whisper Creek Farm, and the brewery's beers will be used in several recipes created by the executive chef, Chris Brown.
